  1. Make ready 150 gms Mix Veggies(carrot, beans,corn,frozen peas finely chopped)

  5. Get 2 large tomatoes roughly chopped
  6. Prepare 5-6 large garlic pods
  7. Take 20 whole red chillies (mix of kashmiri and normal)

  9. Prepare 1/2 tsp sugar
  10. Take 3 tbsp fresh cream
  11. Take 3 tbsp fresh curd (not sour)
  12. Prepare 1 pinch garam masala
  13. Take as needed Coriander leaves finely chopped
  14. Prepare as required Water
Steps to make Creamy Vegetables:
  1. Grind together onions, red chillies, garlic and tomatoes to a smooth paste.
  2. Heat a wide-bottomed pan(preferably non-stick) and add butter.
  3. Once the butter melts, pour the ground paste. Add 1/2 cup of water and salt.
  4. Mix well. Put a lid on and lower the flame. Leave it to cook till it's raw smell disappears completely. Don't forget to keep stirring in between.
  5. In the meantime, heat a kadai or a frying pan and pour oil. Once oil is hot, add finely chopped veggies and a pinch of salt and fry till they are nicely done and golden.
  6. When the raw smell of the ground paste is gone and the gravy becomes thick, add the fried veggies and give a quick mix. If required, add 1/2 cup of water. Let it simmer for 2 minutes.
  7. Beat together fresh cream and curd. Pour onto the gravy, give a quick mix and turn off stove. Do not boil after this step.
  8. Adjust salt. Add sugar to balance taste. Garnish with a handful of chopped coriander leaves and just a pinch of garam masala.
  9. Enjoy with your favourite bread, naan or chappathi. We love to have this with Arabic Kubooz with a salad and some green olives on the side.
