- Take a kadhai and add oil to it. When hot add cumin seeds and whole garam masala and saute for a minute. Add the ginger and garlic chopped and saute. Add the chopped onion and saute and add the tomatoes and cook till mushy.
- Add the cashews and saute and off the flame and keep aside to cool. Once cooled transfer to a grinder (add water to the Kadai, clean it and add in the grinder). In the same kadhai add oil and masala and saute and add the chopped veggies and saute well. Add the ground masala and the veggies and salt to taste. Add little water and close the lid and cook till the veggies are cooker.
- Add the coconut milk and give a boil. Lastly, add the kashti methi and coriander leaves. Enjoy with ghee rice or chapati.
